Achari Chicken Curry
This recipe started with late night YouTube browsing for hair masks. Yep! You heard right , Hair Masks. Apparently, if you combine the first four ingredients and low simmer them for 5 minutes, the water is supposedly really good for hair. Once the water was extracted, I had all this nice mix remaining that I certainly didn’t want to throw away! So I ground it up and kept it in the fridge with some olive oil. The intention was it would become a hair mask but instead, it ended up as the base of this really yummy Chicken Achari curry!
Achari means pickled, and the ingredients in the supposed hair mask are all great pickling agents. You can totally omit the coconut milk if you would prefer to have it drier with a roti. Or add the coconut milk and serve with some white rice. Either way, it’s delicious 😋
Directions:
Saute the onions with all the seasonings, ginger garlic and chicken till the oil separates ( at least 10 mins on high flame stirring intermittently)
Add the tomatoes, and continue to cook till they are cooked and chicken is tender. You can stop here and serve with Roti.
If you want gravy, add in the coconut milk with some additional water and simmer another 10 mins. Garnish with cilantro and serve with rice.
I’m not sure if eating this will be great for your hair, but it certainly will comfort hungry bellies 🙂
