When you don’t want to pick and choose, the easiest option is to combine! This Asian inspired soup/curry is the perfect comfort food! Sweet coconut milk gravy combined with bold flavors of red chillies, fragrant lemongrass and earthy turmeric. For this fusion, the turmeric is inspired from the Singaporean and Malaysian Laksa. The other curry components are very similar to Burmese Khow Suey, and the use of Ramen noodles and cured eggs connects to traditional Japanese Ramen.

The dish can be broken down in multiple stages.

  • Stage 1: The Soup Base
  • Stage 2: Toppings
  • Stage 3: Noodles

The Soup Base

Soup base

Ingredients:

  • 3-4 tsp Thai Red curry paste
  • 2 tsp Ginger garlic paste
  • 1/2 onion pureed
  • 2″ stalk of fresh lemongrass
  • 2 cans coconut milk
  • 1 cup chicken stock
  • 2 tablespoons oil
  • 2 tsp fish sauce
  • 2 tsp soy sauce
  • 1 tsp sugar
  • 1 tsp turmeric
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp cumin powder

Saute the curry paste, onions, ginger garlic and dry spices in oil. After about 5 minutes, add the stock, the coconut milk, and all the other ingredients. Simmer for about 10 minutes.

Toppings

You can have a plethora of possibilities. I used some sautéed baby bokchoy, stir-fried chicken, shredded carrots, basil, and green onions.

Cured eggs: to maintain the authentic Ramen aspect, I put eggs in boiling water for exactly 6 minutes. This leaves the yolks slightly runny. Immediately submerge in an ice bath which stops the cooking and makes it easier to peel. You can then submerge in a diluted soy sauce mixture to give the egg whites the characteristic dark exterior. This is optional but it helps if you have the eggs ready ahead of time.

Chilli oil: If your favorite Chinese restaurant packs some chilli oil in your takeaway, save it for this dish. If you want to make your own, just slowly simmer chilli flakes and chopped garlic in a canola and sesame oil mix. Use this to drizzle over the final bowl for flavor and presentation!

Noodles: I used the dry Ramen noodles, but rice noodles would be equally delicious.

Assembly:

Once all the components are ready, it is simply a matter of putting things together. Start with noodles on the bottom of a bowl. Ladle in some soup. Arrange the other toppings on top and drizzle some chilli oil. Dig in and enjoy this hearty recipe!
