Elevated Cake Mix Creations:

A cake mix in a box is just about the easiest way to get dessert ready. I find the foolproof way to elevate it, is through the toppings and the fillings. Nothing screams summer like fruit, and white cake mix is just about the best accompaniment to a medley of berries or some pureed fillings. Get creative with your variations.

Cupcakes with a Lemony Cream Cheese Frosting

 

1 boxed White cake mix
8 oz Cream cheese
1 stick butter
1 cup confectioner’s sugar
1 tsp vanilla extract
2-3 tsps lemon juice

Eggs, oil, water as directed on cake mix box

Directions

  1. Sift the flour.
  2. Separate the eggs and use only the egg whites. Whip them till fluffy.
  3. Mix the dry ingredients with the oil and water.
  4. Fold in the eggs. Fill muffin cups two-thirds of the way up.
  5. Bake as directed on the box.

Filling:

  1. Beat the cream cheese with softened butter.
  2. Add in the lemon juice and vanilla extract.
  3. Add in confectioner’s sugar(Tip: You can make your own confectioner’s sugar by grinding regular sugar in a coffee grinder till it is super fine).
  4. Put in a piping bag and make decorative swirls or stars on the cupcakes.
  5. Top with fresh berries.

Mango cake:

1 boxed White cake mix
1 tub cream cheese frosting
1 large can mango pulp
4 – 6 tablespoons Jello Pudding Mix

Eggs, oil, water as directed on cake mix box

Prepare the cake mix as directed on box. Pour into tins lined with wax paper. Put some dollops of the mango pulp in the batter. Run a skewer through the dollops to give it a swirly pattern.  Bake in two 9” pans. Allow to cool to room temperature before frosting.

Filling:

  1. Take Mango pulp and add in some pudding mix ( 4-6 tablespoons). If the mix is still too runny, then add more.
  2. Heat gently and then allow to cool.  Allow to set and thicken a bit. Alternately, you can add gelatin as well.
  3. Fold in Cream cheese frosting.
  4. Spread some filling in between the cake layers. Pour some on top and allow to drip down the sides.
  5. Decorate with slices of fresh mango, or peaches and strawberries. DSC 4834 copy 1024x595 - Cake Mix Fun!

I used this recipe to make this easy and mouthwatering dessert. It isn’t long before it is gobbled up! Using the boxed Angel cake mix is not only convenient but preferable too. Every time I have made the angel food cake from scratch, it tends to break.
