What better way to make your house feel welcoming than baking a fresh batch of chocolate chip cookies? This recipes gives you a denser, cakier cookie. I was doubtful at first if I could be converted from the camp of crisp, thin cookies to fat, chunky ones. But this recipe changed that. Of course, it has been modified for high-altitude baking, so if you are at sea-level , adjust the flour and leavening accordingly.

Ingredients:


Yields 16
1 stick (8 tablespoons) butter + additional tablespoon or two if the mix is too crumbly
½ cup white sugar
¼ cup packed light brown sugar
2 tsp vanilla extract
1 large egg
1 ¾ cup all purpose flour
½ teaspoon baking soda
¼ teaspoon salt
2/3 cup semi sweet choc chips

Directions:

Preheat oven to 350.
Mix flour, baking soda, and salt.
In a separate bowl, mix egg, butter and both sugars with vanilla extract for about 3 minutes till creamy. Add in the dry ingredients and mix till combined. Finally, stir in chocolate chips. The mixture will be crumbly but will hold together when pressed.
Place mounded teaspoons on baking sheet lined with parchment paper. Bake for 10-14 mins depending on the size of the cookies. If you do not want to make all the cookies at once, you can pile it on a clear plastic wrap, roll it up and freeze for later.
If you prefer thinner, flatter cookies then don’t mound them up so much. I was going for a more cake-like, fatter cookie!
